Itty Bitty Peppernuts

Soo..It's a Friday and a PD day so I have some spare time on my hand and this is an all time favorite treat in this house so I decided why not make them. They are called Itty Bitty Peppernuts and originally found this recipe in a baking book I borrowed....
Anyways here's how you could make them...same way I make them....

Ingredients:


  • 3 Eggs
  • 2 cups sugar
  • 2 3/4 cups flour
  • 1 teaspoon crushed anise seed 

Directions: 

First you whip the 3 eggs and the 2 cups sugar together until fluffy and then start adding half of the flour... I usually like crushing the anise seed in a little zip-lock bag and roll a rolling pin over it but you could have a better way as long as they become crushed into smaller bits and you should start to smell the sweet scent. Anyways I add this and then add the other half of the flour and knead it into a ball 














Anyways then you take little pieces of that ball and grab some flour and you start rolling them into ropes about 1/2 inch in diameter. I usually lay them on a baking sheet with plastic wrap on it....
then you put them in the refrigerator and wait for an hour........ 

An hour later you can pull it out, it will be stiffer
Then you cut the ropes into smaller pieces and put them onto a backing tray to stick in the oven that's 350 degrees for 10 ish minutes depending on the oven... You don't want the bottoms to become too brown they are better when just slightly toasted...also the longer you let them stand the better they become .... not that they are going to last that long cause  they are very addicting
